Just busy as hell around our joint in the woods of East Texas.  The “Junior Logging Badge” – raccoons jailbreaking the lean-to greenhouse, kicking out Outlook and moving to Thunderbird. Plus hours and hours in my search to finally prove or disprove to myself whether “scalar” is real or (like Bitcoin) all hype and nothing but a virtual deliverable.  So yeah, kinda busy.

In the financial poo-palace, it wasn’t much of a weekend.  The whales drove BTC up to over $107,000 but this morning we’re treading water again at the $103,000 range.

This ain’t new.

Our “second cup ponder” today is the word “Enrichment.” Seems to be a “good word” if President Marketing does it.  But if Iran does it?  Iran warns nuclear talks will fail if US pushes for zero enrichment.  I wouldn’t trust the Iranians with a bomb any more than I would trust the Israli’s French, Chinese….well none of them including US.  That we have gotten away with having a nuclear club in the world (for as long as we have) is a remarkable bit of Statistics.  But like the sailing ship and the bridge this weekend, your luck can change at any moment without so much as a “heads up…”

Not a moment of rest around here this weekend.  Logging, software, backup water system, research in the lab.  So one at a time.

  1. I need to ask my consigliere for permission to put his marvelous paper on Peoplenomics; whether certain specific “seers of future” can get dates right with absolute (to the day) precision.  It’s just a damn fine lawyer/pilot/ham radio/science guy paper.  If yes, see Peoplenomics over Memorial Day weekend.
  2. If you have a driving trip planned for the 3-dayer, top off early this week.  Prices usually go up ahead of and during the holiday.
  3. Outlook got tossed.  I am so pissed at Microsoft which firewalls off their Office/Outlook from the OS side of the house… Long and short of it is I am back on Thunderbird because I don’t want my emails transiting any servers but my ISP and my own, thank you very much  I am less lazy than security-conscious.  But I know there are people who are lazier than hell.  Tons of my “favorites bar” with logons, disappeared thanks to mindless syncing this weekend.  Really pissed me off.
  4. Back-up water system’s second 300 gallon IBC tote will be online this week.  With the new water catchment gear in house, we are on the verge (except for our ages) of being infinitely sustainable out here.  If we don’t do anything other than farm and trap, but still…that door is open…

    What is the U.S. credit rating supposed to mean? It sounds important. Adam Smith’s Invisible Hand.

    Doesn’t it reason when one is less likely to return capital this makes the other more likely to return? As measured by the U.S. CR rating when the U.S. CR is downgraded inversely some other credit rating has to be invisibly strengthening. Who got the drop in rates?

    Or, we’re told ratings are done independently, a vacuum is created and the downgrade only means higher rates for the folks in that system. Global banking happens to be measured in dollars so…..

    Tariffs make higher prices and now the world gets higher rates. The only winner is expansion of the money supply through credit. Lower prices aren’t coming and neither are lower rates.

    same here.. had a half gallon of milk at its end date.. I know its still good a few days but decided rather than make more cheese I’d make yogurt from it.. I was going to make sour cream but I don’t have any culture..I still have to smoke some farmers cheese I made.. I should have made parmesan but didn’t think about it.. two loaves of bread in the proofing box.. it was hard for me to decide make heavy buns or bread.. or dinner rolls.. French bread..
    I have to make up some pasta for lasagna for the freezer.. you know visiting with the Italian chevron vacation was A hiking of mine..he makes his pasta exactly like I do except.. for I will add spices in mine like 1 tablespoon of tones spaghetti seasoning blended to a powder.. my ultimate comfort food..
    I dreamed about shrimp rissoto… yummy simple meal delicious..
    since prices have all gone winky and social security just isn’t enough.. I either have to make more or sell out.. the wife doesn’t want to sell so..I started looking for something that I could do simple temporary a couple days.. just till the bank loan is done for the home improvements.. so I let a couple of old employers know what I was thinking.. holy mackerel.. my phone blew up.. I had to tell them I am not going for the kind of work hours I use to work just a few to compensate..4 administrators called one yesterday asking …the wife is terrified that I will go back to the hours I use to work..
    I’m going to bottle the cacao wine..dam that’s good .. not as good as the forbidden wine of the first emperor of China but great in its own way..
    I want to make Swiss cheese.. but need to get the culture that is different.. most recipes call for a lot of milk I use only what we can’t drink so smaller batches..

    • I have a friend, who is a cafe cook for a living, makes some cheese. I get a small amount sometimes. he uses UNpasturized milk, and it is awesome.
      no store cheese can compare. last time I got some some, he raided my rhubarb and asparagus patch,, we both happy
      each time he makes it a different flavor, always good,,, I AM blessed

  5. Have to believe you are far from “sustainable”. Sure you might be able to go a couple of weeks. But trapping and hunting as a reliable solution for calories? If the event was really loss of most civilization, after two weeks you probably have to keep poachers and probably raiders at bay.

    I am quite jealous of the amount of self reliance you have built up. But realistically unless you are part of a pretty decent size community of those that will protect the compound you probably are only survivable for short term weather events.

    seen the coolest Mexican restaurant to all the decorations hand carved.. wow..it was amazing .. I real Aztec feel..and reasonably priced.. four people full meals with a pitcher of margarita under fifty..and I was stuffed..

    well here’s a simple lefsa recipe or simply potato flat bread.. make them like pancakes thin ..
    making them the old fashioned way is labor intensive..this way you can whip them up fast ..

    3 1/3 cups All-purpose flour
    2 cups left over Mashed potatoes (smooth, no lumps, can be lightly salted)
    1 1/3 tsp Salt max.
    2 tsp Sugar
    2 3/4–3 cups Water (mix of warm and cold, adjust for consistency)
    3 tbsp oil

  8. Oh on TBE potato flatbread.. I love to use milk and cream instead of water.. but that’s personal preference .. we love Scandinavian foods to..

    Sausage days are coming up..usually on labor day I use to make my winters supply of bologna I prefer potato bologna .. I know what the fillers are.
    10 lbs raw potatoes, peeled

    1 medium onion, finely chopped

    5 lbs ground beef

    5 lbs pork

    3 tsp sea salt

    1 tsp allspice ( you choose what seasonings you want) I like

    1 tsp black pepper

    Natural hog casings (for stuffing) ( you can get whatever casings you like as well)

    What’s not shown in this recipe is Meat cure.. pink salt .. recommendations are 1 tsp per five pounds.. but some other recipes say that’s to much half of it..
