  3. Cheese day…
    half gallon of milk left..just hit the expiration date..while its still sweet ..its time to make cheese..I’m making cottage cheese..

    to one gallon.. ( I use the gallon measurements with a half gallon just a little more protein)

    1 gallon milk whole milk..
    3 egg yolks ( the whites of the eggs goes into a Saturday morning omelette.)
    1/4 cup powdered milk
    2 Tbs corn starch
    1/4 tsp calcium chloride ( for store bought milk)
    1/2 tsp animal rennet
    put the eggs starch and powdered milk in a small bowl.. mix in a little milk whisk till its smooth..
    add that to your milk mix it in.
    then heat it up to 140 – 160 degrees
    let it cool to room temperature.. add the calcium chloride and mix in..then the rennet.. mix it in..let it sit..after it coagulation and forms the curd Is cut then let the cut curd sit for oh half hour…I like large curd..then to tighten the curd..cook it at 139 degrees.. dont boil it..if your making mozzarella then you keep the initial milk to warm.. 90 degrees.. Add the rennet.. mozzarella is a low temp cheese..once the curd sets choir it..let the curds rest oh five to ten minutes.. then heat the curds to 110….. drain the whey..dont rinse ( I form into a ball)!!… let it sit for a couple hours.. then you cook it to the 140 to 180 the curds should be bright and chunckle.. form into a ball and stretch stretch stretch like your making taffy..
    oh you can totally make another cheese from the left over whey..or store the whey in the fridge for soups etc..pot over plants..

    we are seeing really thick skins and poor crops this year even the cherry tomatoes.. instead if ponds of green beans we got a couple handfulls..all pretty much inedible.. heat stress..

      Herbalist friend told me to buy a big bunch of Parsely and gently boil it down. Let cool, add sweetener as needed, start chugging. Boy did it all in like 2-3 hours.
      Next he day he awoke to great improvement and clearing skin. Same “Boy” is today a practicing Pediatrician, who would prescribe a Cortisone Cream and or shot depending on severity.

    • I really like scmp.com, but not the food section at all. It provides a lot of info that American news won’t even think about printing. It’s about as balanced as any single source news outlet can be expected to be.

  5. Fruit filled mooncake…. ( A little bit of heaven )

    Ingredients
    1 cup canned pie filling (any flavor)
    1 cup all?purpose flour
    2 tbsp milk powder
    1/2cup golden syrup (or honey if you don’t have it)
    2 tbsp vegetable oil
    1/2 tsp baking soda
    Egg wash (1 egg yolk + 1 tsp water)

    Important if your using canned..Canned pie filling is often chunky. You want it thicker so it doesn’t leak.
    Do one of these…Mash lightly with a fork ( hit with a milk trigger or inversion blender)
    OR
    simmer 5 minutes to thicken…
    OR
    mix in 1–2 tbsp cornstarch…
    Let cool completely…..
    Now
    the mooncake dough
    Mix…
    golden syrup (corn syrup)
    oil
    baking soda
    Then add the flour + milk powder….
    Kneed it till smooth…

    form the bottom make a small divet..( I use a salt shaker bottom)
    put a tsp of filling
    form the top and gently pinch the sides..
    Bake at 350 for five to ten minutes until golden brown brush with wash sprinkle with powdered sugar.. basically a filled sugar cookie..

    i keep most stuff to myself these days. i see alot things such as the True spider story. i keep most of them to myself.

    ya know its a trip, living here again. the last time i lived in this location you could get 12 Tape Cassets for a penny if you purchased 3 at full price. much has changed. i have changed. the last time i moved from away from this place i was making $90,000 a year and I bought my first house. A Brand New 3 bedroom and 3 car garage for $149,000. I was driving a 1993 Ford Probe GT. life was a lot easier back then for a regular hard working young man.

    i was thinking this morning about when i lived her last time, i took in this homeless 15 year old kid. i got him his first job. chipping out the inside of mixers at a concrete place. good job for an angry, rebelious young man.

    he came into the kitchen one sunday and said i found something. i said oh. he said yeah, under the thing that holds the silverware in the drawer i found a stack of checks made out to you for $1500 to $2000. a Big Stack. there is like 20 to 30 of them in there. is that what you make every 2 weeks? i laughed and said no. that is what i make in a week.

    rent here back then was $400 a month.

    he said why do you have all those checks in there? i said well im always at work and i cant make it to the bank in time before they close. (this was back before direct deposit days) and i dont need the money right now. i just gave the land lord $5000 and said let me know when i have to pay rent again. I mail a check to the power company for a thousand dollars and they owed me for 8 to 10 months. so i just stack my paychecks in there and one day i will deposit them all.

    i always had $500 to $600 cash in my wallet. always. for years and years and years. every day.

    the world was beautiful back then. i didnt have an opinion on politics or any of that other dumb shit back then. i didnt even have a cell phone. i had a beeper and a roll of quarters to use a pay phone. i did have a HP 286 Home Computer with Windows 95 on it. but it was only used for playing games like leisure suit larry on rare occasion. lol

    back then Bill Gates was just a nerd and there was no social media. we used to have Hot Rod magazines on top of the toilet and an occasional playboy.

    watching the spider on the path thursday night made me realize… i can go back to that kind of life again. with the red head. live the good life, in the beautiful world. and not have an opinion on all this other bullshit in the world that aint about me and if i chose to do that? then eventually one morning that whole other world will be no more.

    as if it never existed other moment of glory in the eternal now. by a force it could never comprehend and didnt even know was there.

    seems the better.

  7. since i moved back in here. my income has changed to what the equivilant was compartitively back then.

    and although my rent is now $1686 a month for the same placs. it is the same as when it was $400 campaired to how much I make at work.

    i have changed and i have grown much. its like my woman asked mw yesterday about some $$$$ that was coming to me. i said oh it will be here when it gets here. all the bills are paid, i have money in the bank, we have tons of food. i have a bunch of cash in my wallet, i am healthy, i have a healthy relationship with a beautiful woman, a full tank of gas, smokes coffee and bazillian channels to watch if i want on the Tv. we aint in no hurry. there is nothing pressing. we are still going to Paris France for New Years. that $$$$$ will get here when it gets here.

    someone was complaining to me about the price of gas. i said i didnt even notice. i just give them money and fill my car up. they said how could you not notice. i said its 3.1 miles each way for me from home to work. it takes me 8 minutes to get to work. it cost me 1 gallon of gas to get to and from work every week in my little car with the headlight out. so i dont really care about the price of gas.

    i mean i go to the gym and a few other place like costco. that is all within a 10 mile radius. so i go through a half tank of gas about every 3 weeks.

    it is the beautiful world. and all that ugly other world. its built accross the path and at some point some force it cant fathom in its wildest fantasies will destroy it and it will be no more.

    that ugly world, for a moment, i did behold its beauty, its delicate work, its tenacity, and beheld its glory in the eternal now. where confusion, deception, the illusion of control and death was its only god.

    Then one morning it was no more.

    and i lived to tell the tale.

    perhaps i will come back to visit here again and share some pictures of Antartica, a few stories -> should that still be on THE DUDEs list of things for me to do. THY WILL BE DONE.

  8. Never in the history of this state has an extreme fire danger existed as what was declared last night.
    On a one to five level of danger – we went to five – “Extreme Danger”., for the first time in the state history.
    From where I live north to the Canadian Border – East to Spokane – and south to the Oregon border. One big area.
    The Army and Airforce are sending five heavy lift fire fighting helicopters
    National Guard has been mobilized.
    Convoys of trucks, tankers and crews are crossing the Canadian Border and heading down into the area.
    Barges loaded with trucks and tankers are arriving in Seattle – down from Alaska.
    Eight separate ‘Rapid Response Teams’ have ‘already’ been formed.
    Emergency call for resources has been activated for as far away as Florida.

    A big Cold Front is moving in., right about now. Winds are expected to hit 40 to 50 MPH in some areas.. humidity to drop around 10 to 20 percent.., and we are about as dry as I have ever seen.

    We already have five major fires burning – one., just a couple of hills over is at 229,000 acres – zero contained and is expected blow-up significantly as the front passes through. 10AM to 11PM today. Air Quality is damn bad with the smoke from two close-by fires.

    I have the pump, hoses., gen-set all ready – ladder to the roof standing by – large coverage sprinkler is already going in the front…, koi pond is topped-off…,

    But to tell the truth – I don’t think any of that will do much good this time around – high winds and too damn dry.., it’s gonna be moving ‘fast’!

    One friggin’ sicko with a flare pistol and this entire area will be in some serious trouble – very quickly.

    • I suggest you start watering now, to windward. Is your roof metal? How close are the trees? Can you burn back your lawn, even a square foot at a time?

      There are people who’ve mounted successful defenses against, even gigantic wildfires. I would research now, especially since you have a tool capable of sifting and digesting, probably millions of pages per second into single-page summaries…

  10. Shit. I checked online and it looks like State Farm may be one of the worst in paying homeowners for loss due to fire. Too far away now to do anything on site so I guess I’ll just have to hope and pray.

    My neighbors are watching the place, and one told me he will keep the grass and weeds cut back for me.

    Current plan was to fly in March to clean out the house and get it listed. I hope I have more than blackened land and what I have stored in two partially buried shipping containers.

    • One of the guys that lived in our spare room got the one two punch..he lived in one of those neighborhoods where real life doesn’t exist.. then Katrina.. took his big house his belongings etc..the insurance company paid pennies on the dollar….
      when I had the what if policies..then got sick..if its minor no issues if its serious..please resubmit…had to be sent four different ways just to GWT them to accept it.. I know three right now that have had long term care insurance for over twenty years only to discover.. oops should have invested it somewhere else..
      I believe that’s why they are a safer bet in stock purchase..guaranteed return..

  12. my thoughts are with you. fires with high fuel loads are a wild card……….

    Australia has sent a contingent of 74 Australian firefighters to Oregon to assist with wildfire operations. This deployment includes incident management specialists, field supervisors, heavy plant and aviation specialists, and is expected to last for five weeks. New Zealand has also sent a team of specialists.
