SatGourmet: Peanut butter Cookies from Cake?

I Got a request for peanut butter cookies from a cake mix from an old friend that asked me to share it. so here it is.. thank god for my daughter who first turned me on to making cookies with cake mixes.. they are the best.. although when shopping for cake mixes make sure you taste test the dough since there are a couple of cake mixes out there that skimp on sugar.. I also with one brand of cake mix had to add a little flour to firm up the dough.. so here goes enjoy..

Peanut Butter Cake Mix Cookies

1 package yellow cake mix
1 cup creamy peanut butter
½ cup canola oil
2 large eggs
1. Preheat oven to 350 degrees.
2. In a large bowl, combine all of the ingredients. Mix together until well combined.
3. Shape dough into small round balls and place on a cookie sheet. Using a fork, lightly flatten the balls making a
criss cross pattern on the top.
4. Bake all cookies at 350 degrees for 10-12 minutes (check at 9 or 10 minutes to prevent over-browning). Makes 2
dozen cookies.

  1. instead of oil you can use Mayonnaise as well.. during the depression and ww2 oil was rationed.. and everyone could get mayonnaise so they substituted mayo for the oil..

    • Used mayonnaise instead of canola oil and threw in a third egg to compensate for their size. Used a potato masher to mix everything. The batter was a little on the moist side but the cookies came out great. Thick but crispy like sugar cookies with very mild peanut butter taste. Great milk cookies! Also, I filled three baking sheets to yield 34 3-inch cookies.

        If they were really moist dought and they turned out like sugar cookies the odds are you had one of the cake mixes that is predominantly sugar.. for those I add a little flour to thicken it up..
        Then there are a couple of cake mixes that are predominantly flour and a couple that are predominantlysugar.. So i eyeball the dough and adjust with the cake mix. Gor some reason the cheaper the cake mix the better it is.

    • I do love to cook… my muscle in the middle will vouch for that.. I try to be proficient in all the things I do..
